Do you need a rainbow in your day? I love the standard taco salad ingredients minus the fried tortillas, dairy and meat. I prefer to shake it up with a lighter and healthier, grain free version that bombards my body with fiber and nutrients from the rainbow of raw veggies. Extra bonus is feeling full without feeling immobilized like after eating a huge burrito. 👉RAINBOW GRAINFREE BURRITO SALAD BOWL with canned kidney beans, avocado, chopped yellow and compari tomatoes, cilantro, persian cucumbers, corn, red cabbage, scallions and baby bell peppers. 🤘Rainbow Burrito Salad Bowl How to: Prep:10 mins Yield: 2-3 dinner sized salads 1. Wash and chop 1 head romaine, and 1/4 head red cabbage and make the base of your salads by filling 2-3 bowls half and half like a yin yang symbol 2. Defrost 1 cup corn in microwave for 1 min then let cool then divide between salads 3. Drain and rinse 1 can kidney beans then divide between salads 4. Chop 3 persian cucumbers and divide between bowls 5. Deseed and slice 4 baby bells and distribute 6. Peel and slice 1 avocado and divide between salads 7. Chop 2 compari tomatoes and half 5 yellow cherries and divide 8. Chop cilantro and green onions to your liking and distribute 9. Lastly dress with your favorite Vinaigrette, salsa, limes or vegan Ranch dressing and devour. After snapping this photo, I stirred it all together and demolished this beauty. Here are my top ones for making meal prep easier & more organized:⠀⠀ .⠀⠀ 1 - Invest in glass meal prep containers & mason jars: You’ll be motivated to prep once you have the proper storage, your food will last longer in glass and your body & the environment will thank. (I use 16 oz mason jars for overnight oats & 32oz for salad jars )⠀⠀ .⠀⠀ 2 - Stock up on spices: They’re a great low-calorie way to flavor your food and they have their own set of benefits.⠀⠀ .⠀⠀ 3 - Write the meals/recipes you want to try that week then write your grocery list before you grocery shop: I like to write my grocery list in these 5 categories: Protein, Healthy Fats, Fruits + Carbs, Veggies, & Extras.⠀⠀ .⠀⠀ 4 - Multi-task your food: For example, bake sweet potatoes in the oven, chicken on the grill and boil eggs stovetop all at the same time. Probiotics are the healthy bacteria and microbes that live in your gut and keep your gut healthy. . Prebiotics are the food for those microbes. . The magic really happens when you mix the two and get postbiotics. One of the key components of postbiotics is the ability to product short-chain fatty acids. . Short-chain fatty acids (SCFA ) can be made from all carbohydrates, but mainly from prebiotic dietary fibers that fuel the activities of beneficial bacteria. . These organic compounds have many important roles in the gastrointestinal tract, and for your greater health. . Some of these compounds are Acetate, Butyrate, Propionate and Lactate. . 👨🌾 Mental Experimental 👨🌾 •• Two weeks on and the fermented tomatoes 🍅and rainbow chard 🌈 are done! It’s only been a week for the fermented green chilli sauce 🔥and it’s pretty lively so needs at least another week ⏳✅ •• But.. do they taste any good? I mean, they look nice. Lovely colours, which have faded a bit as they’ve fermented but are they delicious? 🤤 Well, actually no! 🛑 Rainbow chard is always bitter when raw, and unfortunately this process hasn’t done it any favours.. it’s just bitter and salty.. might be OK cooked.. We’ll see 🥘🥙 •• The tomatoes taste slightly better 🍅 but the jury is still out to be honest.. I’ll try them again, with fresh tastebuds 🐷 but think they might be better cooked up. Either way, I don’t think I’ll be fermenting either of those ingredients again.. 🌱🌶
