A vegan celebration pie! Decorated with naturally coloured pastry flower and lattice decoration! In a way this is my offering to the Durga puja, the biggest Bengali celebration of the year! The filling of the pie is a Bengali curry called ‘labra ’ made with whatever vegetable available! :::made with #pumpkin / #squash , #radish , #potato , #sweetpotato , #cauliflower or any other vegetable lying around the corner of your fridge: can be used. It is often easy to throw away a sad looking carrot or half an unhappy squash in the bin, but trust me it is far tastier and guilt-free to use it up in your dinner. A bit of spices adds a bit of love that lifts the flavour of the filling and binds everything together! The pastry case is vegan too. And coloured purple or red with a crinkled beet root from my veg drawer, yellow from the turmeric and green from the few odd greens lurking in the deepest corner of the fridge! It may be made using the odds bits and pieces but trust me; it is delicious. And you know why because in this curry, every vegetable is bonded together with love and affection to create something special! I think this is to remind us all that every single person in the society is equally important. A celebration is only complete when we can include everyone, no discrimination due to age, sex, gender, preference, race, colour... with every single one! Hope you all have a nice weekend. TURMERIC CHAI LATTE for vata imbalance 🍂✨⚖️ i always struggle adapting to autumn after summer. i find that my mind is more busy, it's harder to get motivated for the day, and my energy falls off a cliff. according to ayurveda, to correct this imbalance i need more grounding. this includes eating more spices, more healthy fats, and making time for relaxation. so each morning at 7am i've been making this sweet golden latte filled with cosy spices and creamy ghee to help restore balance in my body and mind 💛 ⠀ to make: - 1 cup plant milk (i love using cashew or almond ) - 1/2 tsp ghee or butter - 1 chai tea bag - 1/4 tsp turmeric, ginger, and cinnamon - drop of raw honey ⠀ warm the milk, ghee and spices gently on the stove, allowing everything to steep and the milk to become fragrant and flavourful. after 5 minutes remove tea bag and add milk and honey to a french press and pump a few times to foam. top with a little black pepper for better turmeric absorption and extra sweet cinnamon. sip slowly whilst wrapped in a blanket for ultimate calm cosiness 😌. #strengthandsalad

Roast tomato, ginger, coconut and cardamon curry with brown lemony rice. Unbelievably soothing and just what was needed. I don’t know why but I woke up feeling dreadful today and needed rejuvenation. Stiff bones, low energy I was hankering for a dose of ginger, turmeric, garlic and chilli. The goats were slow too and fast asleep when I went to let them out this morning... must be something in the air. So I gave them a wheelbarrow-full of windfall apples and headed to the farm shop who are selling cheap trays of beautiful end of season Isle of Wight tomatoes. The trick is to roast the tomatoes separately with olive oil and salt intensifying their flavour. In the meantime fry a load of onions with ginger, chilli, garlic, cardamon, lime leaf, all spice and turmeric. Cook down and down allowing the flavours to come together and the onions to collapse. Then add coconut milk and a dash of yoghurt. Simmer gently until thick and delicious. Check your seasoning and gently add the tomatoes. Serve with brown rice and coriander leaves if you have any. Aloo gobi may not be a dish one usually associates with Thanksgiving, but I think it should be, so I'm placing it alongside my upcoming #tatersgiving2020 recipes (since the rest are likely to be far less outside the box ). This is not a typical aloo gobi, since usually the dish is comprised of potatoes and cauliflower only, whereas I added sweet potatoes and kale as well. I paired it with homemade naan (will share an updated recipe soon, but you can find one in older posts ). Happy Thursday! ✨ * ❇️ 𝕀ℕ𝔾ℝ𝔼𝔻𝕀𝔼ℕ𝕋𝕊 𝔽𝕆ℝ 𝕋ℍ𝔼 𝔸𝕃𝕆𝕆 𝔾𝕆𝔹𝕀 ⤵️ 🔹2 cups potatoes, peeled and cubed 🔹2 cups cauliflower florets 🔹2 cups kale 🔹1 cup sweet potatoes, peeled and cubed 🔹1 medium onion, chopped 🔹3 cloves garlic, minced 🔹1 tbsp ginger, grated 🔹1 can (13.66 oz ) coconut milk 🔹1 cup diced tomatoes 🔹3 tbsp tomato paste 🔹2 tbsp vegan butter 🔹1 tbsp oil 🔹1 tsp sugar 🆂🅿🅸🅲🅴🆂 🔹3 pods cardamom 🔹1 stick cinnamon 🔹1 tsp garam masala 🔹1 tsp coriander 🔹1 tsp kasuri methi (fenugreek, optional ) 🔹1 tsp turmeric 🔹1 tsp amchur (dried mango powder, optional ) 🔹½ tsp cumin 🔹½ tsp cloves 🔹½ tsp chili powder (optional ) 🔹S&P to taste ❇️ 𝕄𝔼𝕋ℍ𝕆𝔻 ⤵️ 🔹On a sheet pan spread the potato cubes, drizzle with 1 tbsp oil and broil until almost cooked, about 25 mins. 🔹In a pot melt the vegan butter then add the onion, cook 2 mins. Next add the garlic and ginger and all spices except the cinnamon stick. Cook 1-2 mins, stirring frequently. 🔹Add the diced tomatoes and simmer sauce 5 mins. 🔹Take the pot off heat. Discard the cardamom pods. Using an immersion blender, process the sauce until mostly smooth. 🔹Return sauce to heat. Add the coconut milk, tomato paste, sugar, water, cinnamon stick, mostly cooked potatoes and cauliflower. Simmer until potatoes and cauli are tender, 15 mins. 🔹Add the kale, give the whole thing a stir then cook until kale is reduced in size, 2 mins. Season with S&P to taste and serve with cilantro and lime wedges. Enjoy!
