White Bean Rosemary Stew with Kale It’s a new day and it’s definitely soup weather. One of our favorite soups is a hearty white bean, and you know I’m gonna throw some kale in there. It’s very simple, but it’s oh-so-flavorful. Check out the recipe below, and you will achieve Flavortown status for sure. 2 T extra virgin olive oil 1 yellow onion, diced 4 cloves garlic, minced 4 carrots, chopped 3 ribs celery, chopped 3 (15-ounce ) cans cannellini beans, drained and rinsed 2 teaspoons chopped fresh rosemary 1/2 teaspoon cayenne pepper 1 T kosher salt, black pepper, crushed red pepper flakes 4 cups fresh chopped kale 1 tablespoon Tabasco sauce In a large pot, over medium-high heat, add oil and onion and cook 5-6 minutes, until softened. Add the garlic, carrots, and celery and continue to cook, 6 minutes more. Do not overcook at this point. Add 3 cups of low sodium vegetable stock plus the beans, rosemary, salt, cayenne, black pepper, tabasco and red pepper flakes. Heat to a boil. Reduce heat to medium and simmer, uncovered, for 12-15 minutes until the vegetables are tender.
